Ingredients

01 2 cups cooked chicken, chopped or shredded.
02 1 can refried beans.
03 1/2 cup salsa.
04 1 teaspoon ground cumin.
05 1/2 teaspoon dried oregano.
06 1 teaspoon chili powder.
07 1 cup shredded cheese blend.
08 2 green onions, chopped.
09 3 tablespoons vegetable oil.
10 6 large flour tortillas.

Instructions

Step 01

Cook chicken in a pan until done and no longer pink inside. Let it rest before chopping up.

Step 02

Combine beans, chicken, cheese, salsa, all the spices, and chopped green onions in a bowl. Mix well.

Step 03

Put about 1/2 cup filling in middle of each tortilla. Fold sides over and roll up tight.

Step 04

Heat oven to 400°F. Brush with oil and bake 25 minutes until crispy and golden.

Step 05

Heat oil in pan over medium heat. Cook chimichangas seam down first, turning every 30 seconds until golden all over.
