Preheat oven to 375ºF (190ºC). In a large nonstick skillet over medium heat, cook bacon until crispy, approximately 8 minutes. Drain on a paper towel-lined plate and chop into small pieces.

Spoon approximately 1 tablespoon of Parmesan cheese into a small mound on a large baking sheet. Top each mound with 1 tablespoon of cheddar cheese and carefully pat the cheeses down.

Top each cheese mound with a jalapeño slice. Sprinkle chopped bacon over each mound and season with freshly ground black pepper. Repeat with remaining ingredients.

Bake in the preheated oven until the crisps are golden and crispy, approximately 12 minutes. Allow to cool slightly on the pan before serving.
