Ginger Chicken with Almonds (Print Version)

# Ingredients:

01 - 4 chicken breasts (1½-2 pounds).
02 - 2 teaspoons ground coriander.
03 - 1¼ cup fresh ginger (1 tsp grated, ¼ cup julienned).
04 - 4 teaspoons vegetable oil.
05 - 2 teaspoons white wine vinegar.
06 - 1 teaspoon cornstarch.
07 - ½ teaspoon kosher salt.
08 - ¼ teaspoon black pepper.
09 - 4 large scallions.
10 - ½ cup mango chutney, chopped.
11 - ¼ cup chicken broth.
12 - 1 teaspoon minced garlic.
13 - ¼ cup sliced almonds, toasted.

# Instructions:

01 - Slice chicken into ½-inch pieces. Marinate with coriander, grated ginger, oil, vinegar, cornstarch and seasonings for 15 minutes.
02 - Slice scallion whites thin, julienne greens. Mix chutney with broth and garlic.
03 - Cook scallion whites and julienned ginger in oil. Add chicken and cook 4-6 minutes.
04 - Add scallion greens and chutney mixture, cook 2 minutes. Top with almonds.

01 - Cornstarch keeps chicken tender.
02 - Can serve with or without rice.
03 - Best served immediately.
