Classic Lemon Bars (Print Version)

# Ingredients:

→ Crust

01 - 1 1/2 sticks (12 tablespoons) unsalted butter
02 - 1 large lemon (for zest)
03 - 1/4 cup granulated sugar
04 - 1/2 teaspoon kosher salt
05 - 1 3/4 cups all-purpose flour

→ Filling

06 - 4 large eggs
07 - 5 large lemons (including one from crust)
08 - 1 1/2 cups granulated sugar
09 - 1/3 cup all-purpose flour
10 - 1/2 teaspoon kosher salt

→ Topping

11 - Powdered sugar for dusting

# Instructions:

01 - Bring butter and eggs to room temperature. Heat oven to 350ºF. Line 9x9-inch pan with parchment paper sling.
02 - Mix lemon zest with sugar, then beat with butter and salt until creamy. Add flour until crumbly. Press into pan and bake 15-22 minutes until light golden.
03 - Whisk eggs with lemon zest. Add lemon juice, sugar, and salt. Sift in flour and whisk until smooth.
04 - Pour filling over hot crust. Bake 18-20 minutes until just set. Cool 1 hour, then refrigerate at least 3 hours.
05 - Cut into 16 pieces using hot knife. Dust with powdered sugar before serving.

01 - Must be refrigerated for at least 3 hours before serving
02 - Best served cold
