Carrot Apple Salad (Print Version)

# Ingredients:

01 - 1 red delicious apple
02 - 1 granny smith apple
03 - 2 tablespoons lemon juice
04 - 2 cups matchstick carrots (precut bags can be used)
05 - 1/4 cup yellow onion, finely diced
06 - 1/3 cup dried sweetened cranberries
07 - 1/2 cup vanilla yogurt
08 - 1/4 cup mayonnaise
09 - 1 tablespoon sugar
10 - 1/4 teaspoon salt
11 - 1/4 teaspoon pepper
12 - 1 cup canned mandarin segments, drained

# Instructions:

01 - Cut the red delicious and granny smith apples into matchstick-style pieces and place them into a bowl.
02 - Pour the lemon juice over the apple pieces and toss well to coat them evenly. Let them sit for 5 minutes to prevent browning.
03 - Pour the matchstick carrots into a large mixing bowl. Add the diced onion and dried sweetened cranberries to the bowl.
04 - Add the apples to the mixing bowl after they have soaked for at least 5 minutes.
05 - Add the vanilla yogurt and mayonnaise to the bowl, followed by the sugar, salt, and pepper.
06 - Stir all the ingredients together until well combined.
07 - Gently fold the drained mandarin segments into the salad.
08 - Cover the bowl and refrigerate for at least 3 hours to allow the flavors to meld.
