Spiced Lentil Burgers (Print Version)

# Ingredients:

01 - 1 3/4 cups cooked green lentils or 1 can (15 oz).
02 - 2 tablespoons tomato paste.
03 - 3/4 teaspoon kosher salt.
04 - 3/4 teaspoon smoked paprika.
05 - 3/4 teaspoon ground cumin.
06 - 1/2 teaspoon garlic powder.
07 - 1/2 teaspoon onion powder.
08 - 1/2 teaspoon black pepper.
09 - 1/2 cup grated carrots.
10 - 2 tablespoons fresh parsley, chopped.
11 - 2-3 tablespoons oat flour.
12 - 2-3 tablespoons olive oil.
13 - 4 burger buns.
14 - 1 ripe avocado.
15 - 1 lemon, juiced.
16 - 2 tablespoons tahini.
17 - 1 teaspoon sugar.
18 - 2 cups red cabbage, shredded.
19 - 1/2 cup carrots, shredded.
20 - 1/4 cup fresh parsley, chopped.

# Instructions:

01 - Mash 1 1/4 cups lentils with tomato paste and spices in a bowl. Use a measuring cup bottom or potato masher until well combined.
02 - Mix in whole lentils, carrots, parsley, and oat flour. Shape into 4 thick patties. Add more flour if needed to hold shape.
03 - Mix lemon juice, tahini, sugar, and salt in a bowl. Toss with cabbage, carrots, and parsley until coated.
04 - Heat oil in a pan over medium heat. Cook patties about 3 minutes each side until brown and crispy.
05 - Put burgers on buns with slaw and sliced avocado. Add hummus or other toppings if desired.

01 - Can be frozen for later use.
02 - Slaw stays fresh for 2 days in fridge.
