Valentine's Day Strawberry Cheesecake Truffles (Print Version)

# Ingredients:

→ Truffle Base

01 - 1 1/2 cups (150g) graham cracker crumbs (10 full sheets)
02 - 4 ounces (113g) full-fat cream cheese
03 - 1/3 cup (40g) confectioners' sugar
04 - 1/3 cup (55g) finely diced strawberries

→ Coating

05 - 10 ounces (280g) white chocolate, coarsely chopped
06 - 1 drop red or pink food coloring (optional)

# Instructions:

01 - Line baking sheet with parchment paper. Drain diced strawberries between paper towels.
02 - Mix graham crumbs, cream cheese, and sugar until combined into one clump. Stir in strawberries.
03 - Drop 1.5-2 teaspoon portions onto sheet. Chill 30 minutes, then roll into smooth balls.
04 - Melt white chocolate. Dip each truffle, tapping off excess. Place on lined sheet.
05 - Add food coloring to remaining chocolate and drizzle over truffles. Chill 30 minutes until set.

01 - Drain strawberries well before using
02 - Use quality white chocolate, not chips
03 - Can be made ahead and frozen
04 - Keep refrigerated
