Turkish Eggs (Cilbir) (Print Version)

# Ingredients:

→ For the Yogurt Base

01 - 1 cup Turkish or Greek yogurt
02 - 1 handful fresh dill
03 - 1 handful fresh mint leaves
04 - ½ garlic clove

→ For the Eggs

05 - 2 fresh eggs
06 - 1 tablespoon vinegar

→ For the Spiced Butter

07 - 2 ounces (55g) butter
08 - 1 teaspoon chili flakes
09 - ½ teaspoon smoked paprika
10 - Salt and pepper to taste

# Instructions:

01 - Mix chopped dill, mint, and grated garlic with yogurt. Season with salt and pepper.
02 - Bring water to boil with vinegar. Create vortex and add egg. Cook 3 minutes for runny yolk. Remove with slotted spoon.
03 - Melt butter in pan. Add chili flakes and paprika when bubbling. Stir until combined.
04 - Spread yogurt on plate, top with poached eggs, drizzle with spiced butter. Garnish with herbs and pepper.

# Notes:

01 - Use minimal garlic to avoid overpowering
02 - Use fresh eggs for best poaching results
03 - Can use sweet paprika for milder version
