Sweet & Spicy Jamaican Cabbage (Print Version)

01 - 1 small head green cabbage
02 - 3 teaspoons olive oil
03 - 1 tablespoon butter
04 - ½ sweet onion, diced
05 - 3 cloves garlic, minced
06 - 1 red bell pepper, diced
07 - 1 cup shredded carrot
08 - 1 jalapeno or habanero, finely diced
09 - 3 green onions, chopped
10 - 2-3 sprigs fresh thyme
11 - 1 ½ teaspoon salt
12 - ½ teaspoon black pepper
13 - 1 teaspoon onion powder
14 - 1 teaspoon paprika
15 - ¼ cup water
16 - 2 tablespoons white vinegar
17 - 1 tablespoon granulated sugar

# Instructions:

01 - Chop cabbage into thin strips and place in strainer. Rinse in cold water.
02 - In a pot or dutch oven (with lid), add oil and butter over medium heat. Add onion and cook for 2-3 minutes, then add garlic. Stirring frequently, cook for 1 minute.
03 - Add peppers, carrot, and green onion. Stir to combine and cook for another 3-4 minutes.
04 - Add cabbage, dry seasoning, thyme, and water (do not add sugar and vinegar until the end).
05 - Reduce heat to medium low and place lid on pot. Allow cabbage to steam for about 10 minutes or until tender.
06 - Once cabbage is tender, mix in vinegar and sugar and cook for 1-2 minutes.
07 - Remove thyme sprigs and serve warm.
