Sweet Chili Glazed Salmon (Print Version)

# Ingredients:

01 - 1/2 cup sweet Thai chili sauce.
02 - 2 tablespoons fresh lime juice, plus extra for salad.
03 - 2 teaspoons soy sauce.
04 - 1 tablespoon minced fresh ginger.
05 - 1 bunch green onions, thinly sliced.
06 - 1 1/2 pounds center-cut fresh salmon.
07 - 1 teaspoon Sriracha sauce.
08 - 2 cups mixed baby greens.
09 - 1 tablespoon extra virgin olive oil.
10 - 2-3 sprigs fresh cilantro leaves.
11 - 2-3 sprigs fresh mint leaves.
12 - 1 lime, cut into wedges.
13 - Kosher salt to taste.
14 - Black pepper to taste.

# Instructions:

01 - Combine Thai chili sauce, lime juice, soy sauce, ginger and half the green onions in a bowl.
02 - Pat salmon dry, remove bones if any, and season with salt and pepper.
03 - Pour 1/3 cup sauce in baking dish, place salmon in dish and coat with remaining sauce.
04 - Bake at 275°F for about 20 minutes until internal temperature is 130°F.
05 - Toss greens with olive oil, lime juice, salt and pepper.
06 - Arrange greens on platter, top with salmon, garnish with herbs, remaining green onions and lime wedges.

# Notes:

01 - Best with center-cut salmon.
02 - Can be prepped 2 hours ahead.
03 - Skin can remain on salmon.
