Preheat oven to 400°F. Line a baking sheet with parchment paper or a silicone mat.

In a small bowl, whisk together the egg and water. Set aside.

In a food processor or stand mixer, combine almond paste, granulated sugar, and vanilla extract. Mix until well combined.

Unfold the puff pastry sheet on the prepared baking sheet. Lightly roll it with a rolling pin to slightly enlarge it.

Cut slits 1 inch apart down each side of the puff pastry, leaving a 1/2-inch border on both sides of the center where the filling will go. Spread the almond mixture evenly down the center of the pastry.

Starting at one end, fold the pastry strips over the almond filling on a diagonal, alternating sides to create a braided pattern.

Brush the braided pastry lightly with the egg wash and sprinkle with sliced almonds.

Bake the pastry for 10 minutes at 400°F. Then, reduce the oven temperature to 375°F and continue baking for 17 to 20 minutes, or until golden brown.
