Strawberry Cheesecake Bars (Print Version)

# Ingredients:

01 - 1 1/2 cups graham cracker crumbs.
02 - 1/2 cup unsalted butter, melted.
03 - 16 ounces cream cheese, softened.
04 - 1/2 cup sugar.
05 - 1/4 cup sour cream.
06 - 2 teaspoons vanilla extract.
07 - 2 eggs, room temperature.
08 - 1 3/4 cups fresh strawberries, chopped.
09 - 5 tablespoons sugar for compote.
10 - 3 tablespoons water.
11 - 1/2 tablespoon lemon juice.
12 - 2 teaspoons cornstarch.
13 - 1/4 cup white chocolate.

# Instructions:

01 - Heat oven to 350°F. Line 9-inch square pan with parchment and spray with cooking spray.
02 - Mix graham crumbs with melted butter. Press firmly into pan bottom.
03 - Beat cream cheese, sugar, sour cream and vanilla until smooth. Add eggs one at a time.
04 - Pour filling over crust. Bake 40-45 minutes until edges are golden and center jiggles slightly.
05 - Cook strawberries, sugar, water, lemon juice and cornstarch for 10 minutes until bubbly. Chill.
06 - Cut cooled bars and create groove in top. Fill with compote and drizzle with melted white chocolate.
