Sweet and Savory Beef Noodle Stir-Fry (Print Version)

# Ingredients:

01 - 8 oz (225g) rice noodles
02 - 1 lb (450g) beef sirloin or flank steak, thinly sliced
03 - 2 tablespoons cornstarch
04 - 3 tablespoons vegetable oil, divided
05 - 1 red bell pepper, thinly sliced
06 - 2 cups (120g) broccoli florets
07 - 3 green onions, sliced (plus extra for garnish)
08 - 2 garlic cloves, minced
09 - 1 tablespoon fresh ginger, grated

→ Sticky Sauce

10 - ¼ cup (60ml) soy sauce
11 - 2 tablespoons hoisin sauce
12 - 2 tablespoons honey or brown sugar
13 - 2 tablespoons rice vinegar (or lime juice)
14 - 1 tablespoon sesame oil
15 - ¼ teaspoon red pepper flakes (optional)

# Instructions:

01 - Cook rice noodles according to package instructions. Drain and set aside.
02 - Toss sliced beef with cornstarch. Heat 2 tablespoons oil in skillet over high heat. Sear beef 2-3 minutes per side until browned. Remove and set aside.
03 - Add remaining oil to skillet. Stir-fry bell pepper and broccoli 4-5 minutes until tender-crisp. Add green onions, garlic, and ginger, cooking 1-2 minutes more.
04 - Whisk together soy sauce, hoisin sauce, honey, rice vinegar, sesame oil, and red pepper flakes in a small bowl.
05 - Return beef to skillet with vegetables. Add cooked noodles and pour sauce over everything. Toss well to coat.
06 - Divide among bowls and garnish with extra green onions and optional sesame seeds.
