Starbucks Lime Coconut Bars (Print Version)

# Ingredients:

01 - ½ cup butter, softened (salted or unsalted)
02 - ⅔ cup brown sugar
03 - 1 egg, at room temperature
04 - 1 teaspoon vanilla extract
05 - ¼ teaspoon coconut extract
06 - 1 & ¼ cups flour
07 - ½ teaspoon baking powder
08 - ¼ teaspoon salt
09 - ½ cup shredded coconut, plus extra for topping
10 - ⅓ cup mini white chocolate chips

→ Lime Frosting

11 - ½ cup butter, at room temperature
12 - ½ teaspoon lime extract
13 - 1 & ½ cups powdered sugar
14 - 1 tablespoon heavy cream or milk
15 - 2 tablespoons lime juice
16 - Green or yellow food coloring (optional)
17 - 2 tablespoons white chocolate, melted (for drizzling)

# Instructions:

01 - Preheat the oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper and set aside.
02 - Cream the butter and brown sugar together until creamy. Add the egg, vanilla extract, and coconut extract, and mix to combine.
03 - Fold in the flour, baking powder, salt, and shredded coconut just until the flour mixture disappears.
04 - Fold in the mini white chocolate chips and spread the batter evenly onto the prepared baking pan.
05 - Bake the mixture for 15-16 minutes. Remove the pan from the oven and allow the coconut bars to cool completely.
06 - In a large bowl, whip the softened butter, powdered sugar, milk, lime juice, and lime extract together until light and fluffy. Adjust food coloring as needed for desired color.
07 - Spread the lime frosting over the cooled coconut bars. Drizzle with melted white chocolate using a piping bag, ziplock bag, or spoon as desired.
08 - Sprinkle additional shredded coconut on top. Slice the bars and serve. Chill in the fridge if preferred.
