Preheat the oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper and set aside.

Cream the butter and brown sugar together until creamy. Add the egg, vanilla extract, and coconut extract, and mix to combine.

Fold in the flour, baking powder, salt, and shredded coconut just until the flour mixture disappears.

Fold in the mini white chocolate chips and spread the batter evenly onto the prepared baking pan.

Bake the mixture for 15-16 minutes. Remove the pan from the oven and allow the coconut bars to cool completely.

In a large bowl, whip the softened butter, powdered sugar, milk, lime juice, and lime extract together until light and fluffy. Adjust food coloring as needed for desired color.

Spread the lime frosting over the cooled coconut bars. Drizzle with melted white chocolate using a piping bag, ziplock bag, or spoon as desired.

Sprinkle additional shredded coconut on top. Slice the bars and serve. Chill in the fridge if preferred.
