Split Pea Soup (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - 1 1/2 cups chopped yellow onion.
03 - 1 1/4 cups chopped celery.
04 - 1 teaspoon minced garlic.
05 - 4 cups unsalted chicken broth.
06 - 4 cups water.
07 - 16 ounces dried split peas.
08 - 2 bay leaves.
09 - 1 1/2 teaspoons fresh thyme.
10 - Salt and pepper to taste.
11 - 1 1/2 pounds meaty ham bone.
12 - 1 cup chopped carrots.
13 - Fresh parsley for garnish.

# Instructions:

01 - Cook onion and celery in oil 3 minutes, add garlic 1 minute more.
02 - Add broth, water, peas, herbs and ham bone. Bring to boil then reduce to simmer.
03 - Simmer covered 60-80 minutes until peas and ham are tender.
04 - Remove ham, let rest 10 minutes then shred meat.
05 - Add carrots and simmer 30 minutes more until peas break down.
06 - Return ham to soup, adjust seasoning and garnish.

# Notes:

01 - Can be made in slow cooker or Instant Pot.
02 - Can add potatoes with carrots if desired.
03 - Soup thickens as it cools.
