Sour Cream Cookie Bars (Print Version)

# Ingredients:

01 - 2 sticks (8 ounces) unsalted butter
02 - 1/2 cup full-fat sour cream
03 - 1 large egg
04 - 1 1/2 cups granulated sugar
05 - 1 tablespoon lemon juice
06 - 2 teaspoons vanilla extract
07 - 1/2 teaspoon kosher salt
08 - 2 1/2 cups all-purpose flour

→ Frosting

09 - 1 stick (4 ounces) unsalted butter
10 - 1 pinch kosher salt
11 - 1 teaspoon vanilla extract
12 - 2 cups powdered sugar
13 - 1-2 drops food coloring (optional)
14 - 1/4 cup rainbow sprinkles (optional)

# Instructions:

01 - Bring butter, egg, and sour cream to room temperature. Heat oven to 350ºF. Line 9x9-inch pan with parchment paper sling.
02 - Beat butter and sugar until fluffy. Add sour cream, egg, lemon juice, vanilla, and salt. Mix in flour until just combined.
03 - Spread in prepared pan. Bake 30-35 minutes until golden. Cool 10 minutes in pan, then remove and cool completely.
04 - Beat butter and salt until creamy. Add vanilla. Gradually beat in powdered sugar. Add optional food coloring.
05 - Spread frosting over cooled bars. Add optional sprinkles. Let set 30 minutes or refrigerate 20 minutes before cutting into 16 pieces.
