One-Pot Cajun Sausage Rice (Print Version)

# Ingredients:

→ Main

01 - 12 ounces smoked sausage (andouille or kielbasa), sliced
02 - 1 cup long-grain white rice, rinsed
03 - 1½ cups chicken broth

→ Vegetables

04 - 1 red bell pepper, diced
05 - 1 green bell pepper, diced
06 - 1 medium yellow onion, diced
07 - 3 cloves garlic, minced

→ Seasonings

08 - 2 tablespoons Cajun seasoning
09 - 1 tablespoon olive oil
10 - Salt and pepper, to taste

→ Garnish (Optional)

11 - Fresh parsley, chopped
12 - Green onions, sliced
13 - Hot sauce

# Instructions:

01 - Slice sausage into ½-inch rounds. Dice bell peppers and onion. Mince garlic. Rinse rice until water runs clear.
02 - Heat olive oil in large skillet over medium heat. Cook sausage 5-7 minutes until browned. Remove and set aside.
03 - In same skillet, cook onion and bell peppers about 3 minutes until softened. Add garlic and cook 1 minute more.
04 - Add rinsed rice to skillet with vegetables. Toast 2 minutes, stirring occasionally.
05 - Add chicken broth and Cajun seasoning. Bring to boil, reduce heat, cover and simmer 15-20 minutes until rice is tender.
06 - Return sausage to skillet, stir to combine. Cook 3-5 minutes more to meld flavors.
07 - Garnish with optional parsley, green onions, or hot sauce.
