01 - 3 pounds sirloin steak, cut into bite-sized pieces
02 - 2 teaspoons kosher salt
03 - 1 teaspoon black pepper
04 - 1 tablespoon vegetable oil
05 - 1 small sweet onion, thinly sliced
06 - 3 cloves garlic, thinly sliced
07 - 1 cup unsalted beef stock
08 - 1 ounce au jus gravy mix
09 - 4 tablespoons unsalted butter, thinly sliced

# Instructions:

01 - Place the sirloin steak in a large bowl and season with kosher salt and black pepper. Toss to combine.
02 - Heat a large skillet over medium-high heat and add vegetable oil. Once hot, sear the steak pieces in batches until browned but not cooked through. Add more oil if necessary.
03 - Transfer the seared steak pieces into a 6-quart slow cooker. Add the sweet onion and garlic, gently stirring to combine.
04 - Pour unsalted beef stock into the slow cooker. Sprinkle au jus gravy mix evenly over the top. Place the sliced butter on top of the mixture.
05 - Cover the slow cooker and cook on high for 3-4 hours or low for 6-8 hours, stirring once every hour if possible. Serve with mashed potatoes, egg noodles, or rice.
