# Ingredients:

01 - 1 pound raw shrimp, peeled and deveined
02 - 3/4 cup panko breadcrumbs
03 - 1/4 cup red bell pepper, finely diced
04 - 3 tablespoons chives, sliced
05 - 1/2 teaspoon salt
06 - 1/4 teaspoon pepper
07 - 2 large eggs
08 - 1 teaspoon lemon zest
09 - 4 tablespoons olive oil

# Instructions:

01 - Place the shrimp in the bowl of a food processor and pulse until coarsely chopped, avoiding grinding it into a paste.
02 - Transfer the chopped shrimp to a large bowl and add panko breadcrumbs, red bell pepper, chives, salt, pepper, eggs, and lemon zest. Stir gently until evenly combined.
03 - Divide the mixture into 6 portions and shape each into a patty.
04 - Heat the olive oil in a large pan over medium-high heat. Place the patties in a single layer and cook for 4-5 minutes on each side until golden brown.
05 - Serve immediately, garnished with additional chives, a dollop of sour cream, and lemon wedges, if desired.
