                Cook slowly in oil over medium heat until browned all over. Remove from pan.

                Add peppers and onions to same pan, cook until soft. Add garlic last minute.

                Pour in wine if using, scrape up brown bits. Let reduce by half.

                Add tomatoes, oregano, pepper flakes, and sausages. Cover and cook 20 minutes.

                Great on rolls, over pasta, or with polenta.
