Red Velvet Molten Lava Cupcakes (Print Version)

# Ingredients:

→ For Cupcakes

01 - 1 box (15 oz) red velvet cake mix, plus ingredients called for on box

→ For Ganache Filling

02 - 8 ounces semi-sweet baking chocolate
03 - ½ cup heavy cream

→ For Garnish

04 - Powdered sugar for dusting

# Instructions:

01 - Chop baking chocolate and place in medium bowl. Heat cream until simmering, pour over chocolate. Stir until smooth. Chill until firm, at least 2 hours.
02 - Preheat oven to 350°F. Line muffin tins with cupcake liners.
03 - Prepare cake mix according to box directions. Fill each liner about ½ full of batter.
04 - Scoop 1 tablespoon balls of chilled ganache and place one in center of each cupcake batter.
05 - Bake 20-23 minutes until toothpick inserted in side comes out clean. Cool briefly in pans.
06 - Remove liners, turn cupcakes upside down on plates, and dust with powdered sugar. Best served warm.
