Quick and Easy Pastina (Print Version)

# Ingredients:

01 - 4 tablespoons butter, divided.
02 - 1/2 cup diced celery.
03 - 1/2 cup diced carrots.
04 - 1/2 cup diced onion.
05 - 1 clove minced garlic.
06 - 1 cup pastina or orzo pasta.
07 - 4 cups chicken bone broth.
08 - 1/4 teaspoon turmeric.
09 - 1/4 teaspoon kosher salt.
10 - 1/4 teaspoon fresh ground pepper.
11 - 1/2 cup grated parmesan cheese.
12 - 1 egg, whisked (optional).
13 - Fresh parsley for garnish.
14 - Lemon wedges for serving.

# Instructions:

01 - Melt 2 tablespoons butter in a Dutch oven. Cook onion, carrot, and celery until soft. Add garlic and cook until fragrant.
02 - Pour in bone broth and add turmeric, salt, and pepper. Bring to a gentle simmer.
03 - Add pastina or orzo to the simmering broth. Cook until just tender but still firm.
04 - Remove from heat. Stir in parmesan and remaining butter until melted.
05 - Let cool slightly. If using egg, slowly stir it in while stirring constantly.
06 - Top with fresh parsley, extra parmesan, and a squeeze of lemon.
