Quick Chicken Hummus Wraps (Print Version)

# Ingredients:

→ For The Wraps

01 - 4 pieces of naan bread
02 - 1 cup of roasted red pepper hummus
03 - 4 cups of organic spring mix
04 - 3 cups of shredded cooked chicken
05 - 4 tablespoons of full-fat feta cheese or goat cheese

→ Veggie Mixture

06 - 1/2 cup of peeled, sliced & quartered cucumber
07 - 1 cup of quartered cherry tomatoes
08 - 1/2 cup of peeled & diced red onion
09 - 1/4-1/3 cup of homemade red wine vinaigrette

→ Garnish

10 - 1 1/2 teaspoons of extra vinaigrette per wrap
11 - Sea salt & black pepper, to taste
12 - Extra virgin olive oil for drizzling

# Instructions:

01 - Warm naan bread under LOW broil for 3-5 minutes per side until slightly toasted, or warm in skillet or toaster oven.
02 - Combine chopped cucumber, tomatoes, and red onion in a bowl. Toss with red wine vinaigrette until well coated.
03 - Lay naan flat and spread 1/4 cup hummus across surface. Place 1 cup spring mix on one half, shredded chicken on other half.
04 - Top with 1/2 cup veggie mixture and crumble 1 tablespoon feta cheese over veggies.
05 - Drizzle with extra vinaigrette, season with salt and pepper, and add olive oil. Serve flat or tie with hemp cord for presentation.

01 - For make-ahead prep, pack marinated veggie mixture separately to prevent soggy naan
02 - Leftover veggie mixture works well in Mediterranean salad
