                Heat oven to 400°F. Grease 24-cup mini muffin tin.

                Combine potatoes, eggs, 3/4 cup cheese and chives. Season with salt and pepper.

                Scoop potato mixture into muffin cups, top with remaining cheese.

                Cook 15-20 minutes until puffed and golden brown.

                Cool 5 minutes, remove from tin, garnish with chives and sour cream if desired.
