Classic Porcupine Meatballs Recipe (Print Version)

# Ingredients:

→ Meatballs

01 - 1¾ pounds extra lean ground beef
02 - 1 medium onion, finely chopped
03 - ½ teaspoon poultry seasoning
04 - 1 pinch ground cloves
05 - ½ teaspoon dried thyme
06 - 1 teaspoon baking powder
07 - 2 teaspoon salt
08 - ½ teaspoon pepper
09 - ½ cup uncooked long-grain rice
10 - 1 cup milk
11 - 2 tablespoons olive oil

→ Sauce

12 - 2 cans (10.75 oz each) condensed tomato soup
13 - 2 cans water (use empty soup cans)
14 - 2 tablespoons finely chopped parsley

# Instructions:

01 - Preheat oven to 350°F (175°C).
02 - Combine all meatball ingredients in a large bowl. Mix well with clean hands until evenly combined.
03 - With wet hands, shape mixture into about 30 medium-sized meatballs. Place in oiled 9x13 inch casserole dish.
04 - Mix tomato soup with water and pour over meatballs. Sprinkle with parsley and cover with foil.
05 - Bake covered for 35 minutes, then uncover and bake 30-35 minutes more until rice pokes through meatballs.

# Notes:

01 - Use a cookie scoop for uniform meatball size
02 - Rinse rice before using to remove excess starch
03 - Can be frozen in sauce for later use
