Plantain Frittata (Print Version)

# Ingredients:

01 - 3 large eggs.
02 - 3 tablespoons olive oil, divided.
03 - ½ bell pepper, diced.
04 - 3 scallions, sliced.
05 - 2 Roma tomatoes, diced.
06 - ½ cup baby spinach.
07 - 2 small ripe plantains, sliced.
08 - 1 tablespoon fresh rosemary.
09 - 1 teaspoon sea salt.
10 - 1 teaspoon black pepper.
11 - Red chile flakes for serving.

# Instructions:

01 - Heat oven to 400°F. Whisk eggs until frothy.
02 - Sauté peppers, scallions, tomatoes until bright. Add spinach until wilted.
03 - Pour eggs over vegetables. Layer plantains in circular pattern.
04 - Drizzle with oil, add salt, pepper, and rosemary.
05 - Cook 15 minutes until risen and plantains are golden.

01 - Use ripe yellow plantains.
02 - Best in cast-iron skillet.
