One-Pan Pineapple Chicken Rice (Print Version)

# Ingredients:

→ Main

01 - 1 pound chicken breast, cubed
02 - 1 cup pineapple, cubed
03 - 1 cup jasmine rice
04 - 2 cups chicken broth

→ Vegetables & Aromatics

05 - 1 onion, chopped
06 - 2 cloves garlic, minced
07 - 1 red bell pepper, diced
08 - 1 teaspoon ginger, grated

→ Seasonings

09 - 1 tablespoon olive oil
10 - 1 tablespoon soy sauce
11 - Salt and pepper to taste

→ Garnish

12 - ¼ cup green onions, sliced
13 - 1 tablespoon sesame seeds

# Instructions:

01 - Heat olive oil in large skillet. Cook cubed chicken until golden brown. Remove and set aside.
02 - Sauté onion, garlic, and bell pepper until softened. Add pineapple and cook 2 minutes.
03 - Add rice, broth, soy sauce, ginger, salt, and pepper. Bring to boil, reduce heat, cover and simmer 18-20 minutes.
04 - Return chicken to skillet, mix well. Top with green onions and sesame seeds.
