                Cut long steak into 5-7 inch pieces so they fit in your pan better.

                Pat steaks super dry with paper towels. Season both sides well with salt and pepper.

                Get your cast iron screaming hot - give it 3 minutes on high heat. Add the oil.

                Put steak in pan and press it down. Cook 2-4 minutes each side until it hits 130°F for medium rare. Work in batches if needed.

                Let steaks rest under foil for 10 minutes. Don't skip this or you'll lose all the juices.

                Cut across the grain at a 45-degree angle, making thin slices about 1/4 inch thick.
