# Ingredients:

01 - 1 ½ cups graham cracker crumbs
02 - ½ cup unsalted butter, melted

03 - 2 cups cream cheese, softened
04 - 1 cup powdered sugar
05 - 1 cup heavy whipping cream
06 - 1 cup fresh orange juice
07 - Zest of 1 orange
08 - 1 teaspoon vanilla extract
09 - 1 envelope (2 tablespoons) unflavored gelatin
10 - 2 tablespoons cold water
11 - Additional orange slices or zest for garnish (optional)

# Instructions:

01 - Combine graham cracker crumbs and melted butter in a mixing bowl. Mix until fully combined and press into the bottom of a 9-inch springform pan.
02 - Beat the softened cream cheese in a large bowl until smooth and creamy.
03 - Gradually add powdered sugar to the cream cheese, mixing until well combined.
04 - Add heavy whipping cream, fresh orange juice, orange zest, and vanilla extract. Beat on medium-high speed until light and fluffy.
05 - Sprinkle gelatin over cold water in a small bowl. Let it bloom for five minutes, then gently heat in the microwave for 10 seconds until dissolved.
06 - Slowly pour the dissolved gelatin into the cheesecake mixture, stirring until fully incorporated.
07 - Pour the cheesecake filling evenly over the crust in the springform pan and smooth the surface with a spatula.
08 - Cover the pan with plastic wrap or foil and refrigerate for at least 4 hours or overnight until set.
09 - Once set, carefully remove the sides of the springform pan.
10 - Top with additional orange slices or zest for decoration before serving.
