Mushroom Goat Cheese Tarts (Print Version)

# Ingredients:

01 - Frozen puff pastry sheet, thawed.
02 - Fresh mushrooms, 2 cups chopped.
03 - Fresh shallots, 2 whole finely chopped.
04 - Fresh garlic cloves, 2 minced.
05 - Herbed goat cheese, 4 ounces.
06 - Extra virgin olive oil, 1 tablespoon.
07 - Unsalted butter, 1 tablespoon.
08 - Fresh egg for brushing.
09 - Fresh thyme sprigs for topping.
10 - Salt and black pepper to taste.

# Instructions:

01 - Get your oven hot at 375°F and line a baking sheet with parchment.
02 - Cook shallots in oil and butter until soft, add garlic until fragrant, then toss in mushrooms and cook until golden.
03 - Add salt and pepper to your mushroom mix while it's still warm.
04 - Roll your pastry thin on a floured counter and cut into even pieces.
05 - Put some mushroom mix on each pastry piece, then crumble goat cheese on top.
06 - Fold pastry edges over to make rustic tarts and brush with beaten egg.
07 - Pop in the oven until golden and puffy, about 20-25 minutes.
08 - Sprinkle fresh thyme on top and let cool a few minutes before serving.
