Mom's Turkey Soup (Print Version)

# Ingredients:

01 - 1 leftover turkey carcass with drippings.
02 - 1 large yellow onion, cut in wedges.
03 - 2 carrots with tops, roughly chopped.
04 - 1 celery rib with tops, chopped.
05 - Fresh parsley sprigs.
06 - 2 sprigs fresh thyme.
07 - 1 bay leaf.
08 - 10 whole peppercorns.
09 - 2 tablespoons butter.
10 - 1 1/2 cups diced carrots.
11 - 1 1/2 cups diced onion.
12 - 1 1/2 cups diced celery.
13 - 2 garlic cloves, minced.
14 - 2 teaspoons poultry seasoning.
15 - 8 ounces egg noodles (optional).
16 - 4 cups cooked turkey meat, chopped.
17 - Salt and pepper to taste.

# Instructions:

01 - Strip usable meat from turkey carcass and save. Place bones, skin, and giblets in large pot with cold water.
02 - Put onion wedges, rough-cut carrots, celery, herbs, and peppercorns into pot. Cover with water.
03 - Bring to boil, reduce heat, and simmer gently for 4 hours. Skim foam occasionally.
04 - Remove bones and vegetables. Strain liquid through fine mesh strainer.
05 - Heat butter in clean pot. Cook diced carrots, onions, and celery until soft.
06 - Add garlic, strained stock, seasonings, and turkey meat. Simmer until vegetables are tender. Add noodles if using.

# Notes:

01 - Stock can be made ahead and frozen.
02 - Use any leftover turkey drippings for extra flavor.
03 - Adjust vegetables and seasonings to taste.
