Mini Sweetened Condensed Milk Cheesecake Jars (Print Version)

# Ingredients:

→ Crust

01 - 1 1/2 cups graham cracker crumbs (about 1 sleeve)
02 - 1/3 cup butter, melted

→ Cheesecake Filling

03 - 24 ounces cream cheese, softened
04 - 14 ounces sweetened condensed milk
05 - 4 large eggs
06 - 2 teaspoons vanilla extract
07 - 1/4 teaspoon lemon extract

→ Strawberry Sauce

08 - 16 ounces strawberries
09 - 1/2 cup granulated sugar
10 - 3 tablespoons cornstarch
11 - 1/2 cup water
12 - 1 tablespoon lemon juice

# Instructions:

01 - Preheat oven to 300°F. Mix graham cracker crumbs with melted butter and spoon 1 tablespoon into each jar, pressing lightly.
02 - Beat cream cheese until smooth, then mix in sweetened condensed milk. Add eggs and extracts on low speed until just combined.
03 - Scoop mixture into jars, filling to just below where lid would start. Bake for 20-25 minutes until just set.
04 - Combine all sauce ingredients in saucepan. Bring to light boil and mash berries to desired consistency.
05 - Cool cheesecakes at room temperature, then top with strawberry sauce. Chill for at least one hour before serving.
