Easy Mini Baileys Cheesecakes (Print Version)

# Ingredients:

→ Crust

01 - 12 chocolate sandwich cookies, crushed
02 - 2 tablespoons butter, melted
03 - Pinch of coarse salt

→ Filling

04 - 12 ounces cream cheese, softened
05 - 2 large eggs
06 - 1/3 cup white sugar
07 - 1/4 cup Irish cream liqueur
08 - 1/4 cup sour cream
09 - 1 1/2 tablespoons all-purpose flour
10 - 1/2 teaspoon vanilla extract
11 - 1/2 cup mini chocolate chips

→ Topping

12 - Whipped cream
13 - Chocolate drizzle
14 - Mini chocolate chips

# Instructions:

01 - Heat oven to 325°F. Line muffin tin with paper liners and spray with cooking spray.
02 - Mix crushed cookies with butter and salt. Press into liners.
03 - Beat cream cheese until fluffy. Add eggs, sugar, Baileys, sour cream, flour, vanilla and salt.
04 - Coat chocolate chips with remaining flour, fold into batter. Fill crusts.
05 - Bake 20 minutes until almost set. Cool 30 minutes, then chill 2 hours.
06 - Top with whipped cream, chocolate drizzle and mini chips.

# Notes:

01 - Centers should still jiggle slightly when done
02 - Flour coating prevents chips from sinking
03 - Must chill at least 2 hours
