Classic Mexican Wedding Cookies (Print Version)

# Ingredients:

01 - 1 cup butter, softened
02 - ½ cup powdered sugar, plus more for rolling
03 - 1 teaspoon vanilla extract
04 - 2¼ cups all-purpose flour
05 - ½ teaspoon kosher salt
06 - ¾ cup finely chopped pecans or walnuts

# Instructions:

01 - Preheat oven to 400°F.
02 - Cream butter, sugar and vanilla. Mix in flour and salt until just combined. Stir in nuts.
03 - Form into 1-inch balls, rolling smooth between hands.
04 - Bake 10-12 minutes until set but not browned.
05 - Roll warm cookies in powdered sugar. Cool on rack, then roll again in sugar.
