In a food processor, pulse onion and mushrooms to a coarse texture. Set aside.

In a large frying pan, brown the ground beef. Drain fat and set aside.

In the same frying pan, heat oil. Add the mushroom mixture and sauté for 3-4 minutes, or until most of the moisture is released.

Add black beans to the mushroom mixture and mix well.

Add the cooked beef, taco seasoning, crushed tomatoes, and corn to the black bean and mushroom blend. Mix well and cook until heated through.
