Matcha White Chocolate Bark (Print Version)

# Ingredients:

01 - 3 tablespoons (45g) puffed quinoa.
02 - 8 oz (226g) dark chocolate, finely chopped.
03 - 12 oz (340g) white chocolate, finely chopped.
04 - 1 teaspoon (4g) matcha powder, sifted.
05 - 1-2 teaspoons (2g) cocoa butter (optional).
06 - Sprinkles for topping (optional).

# Instructions:

01 - Line 9x13 pan with buttered parchment paper. Spread puffed quinoa evenly in pan.
02 - Gently melt 3/4 of dark chocolate. Add remaining chocolate and stir until melted and cooled to 88-90°F.
03 - Pour dark chocolate over quinoa, spread evenly. Tap pan to remove bubbles. Let set 15-20 minutes.
04 - Gently melt 3/4 of white chocolate, then stir in remaining until fully melted.
05 - Take 1/3 of melted white chocolate and mix with sifted matcha powder.
06 - Spread plain white chocolate over dark layer. Drop matcha mixture on top and swirl with toothpick.
07 - Add optional sprinkles and let set 1-2 hours at room temperature before breaking into pieces.

# Notes:

01 - Properly tempered chocolate will set at room temp.
02 - Can use tiny puffed rice instead of quinoa.
03 - Keep refrigerated if chocolate isn't tempered.
