Line 9x13 pan with buttered parchment paper. Spread puffed quinoa evenly in pan.

Gently melt 3/4 of dark chocolate. Add remaining chocolate and stir until melted and cooled to 88-90°F.

Pour dark chocolate over quinoa, spread evenly. Tap pan to remove bubbles. Let set 15-20 minutes.

Gently melt 3/4 of white chocolate, then stir in remaining until fully melted.

Take 1/3 of melted white chocolate and mix with sifted matcha powder.

Spread plain white chocolate over dark layer. Drop matcha mixture on top and swirl with toothpick.

Add optional sprinkles and let set 1-2 hours at room temperature before breaking into pieces.
