Marry Me Salmon (Print Version)

# Ingredients:

01 - 150g Marie Biscuits or graham crackers.
02 - 100g unsalted butter, melted.
03 - 2 tablespoons white sugar.
04 - 700g mango flesh (2 large mangoes).
05 - 4½ teaspoons gelatin powder.
06 - 500g cream cheese, softened.
07 - ⅔ cup caster sugar.
08 - 300ml whipping cream.
09 - ¾ teaspoon gelatin powder for jelly.
10 - 1 tablespoon lemon juice.
11 - Optional toppings: cream, sugar, vanilla, mango, passionfruit.

# Instructions:

01 - Line 9-inch springform pan with parchment, base upside down.
02 - Blend biscuits with butter and sugar. Press into pan.
03 - Prepare gelatin. Blend mango, reserve ¾ cup. Mix with cheese, cream, sugar.
04 - Mix reserved mango with gelatin, pour over set filling.
05 - Refrigerate 12+ hours. Decorate with optional toppings.

# Notes:

01 - Needs minimum 12 hours to set.
02 - Use ripe mangoes for best flavor.
03 - Sprinkle gelatin carefully over water.
