Over high heat, bring a large pot of water to a rolling boil. Blanch fries in boiling water for 2-3 minutes, then drain and pat dry if using fresh-cut fries. Fry fresh-cut potatoes in heated oil at 350°F until golden and crispy, or cook frozen fries as directed on the package. After draining on paper towels, sprinkle with salt.

Melt 1 tablespoon butter in a small saucepan over low heat. Add 1 tablespoon flour and simmer until smooth, about 1 minute. Gradually whisk in 1 cup milk until the liquid thickens. Stir in 1 cup shredded cheddar cheese until it melts and the mixture becomes creamy. Add more milk as needed to achieve desired consistency. Remove from heat.

In a small bowl, combine 1 teaspoon hot sauce, 1 teaspoon Cajun seasoning, and 1/4 cup ranch dressing. Stir until thoroughly blended. Set aside.

Place cooked fries on a serving plate. Drizzle the homemade cheese sauce over the fries. Evenly distribute bacon crumbles on top, if using. Add chopped green onions and drizzle the hot ranch mixture over the top, if desired. Serve hot and crispy immediately.
