Classic King Ranch Chicken Casserole (Print Version)

# Ingredients:

01 - 1 medium green bell pepper, chopped
02 - 1 medium yellow onion, chopped
03 - 2 tablespoons vegetable oil
04 - 2 cups chopped cooked chicken
05 - 1 (10.5-oz.) can cream of chicken soup
06 - 1 (10.5-oz.) can cream of mushroom soup
07 - 1 (10-oz.) can diced tomato and green chiles (such as Rotel)
08 - 1 teaspoon chili powder
09 - ¼ teaspoon kosher salt
10 - 2 pinches garlic powder
11 - 2 pinches ground black pepper
12 - 12 corn tortillas, torn into 1-inch pieces
13 - 2 cups grated Cheddar cheese

# Instructions:

01 - In large skillet over medium-high heat, sauté bell pepper and onion for 5 minutes or until tender.
02 - Stir in chicken, soups, tomatoes and chiles, chili powder, salt, garlic powder, and black pepper. Remove from heat.
03 - Layer one-third of torn tortillas in bottom of lightly greased 13x9-inch baking dish. Top with one-third of chicken mixture and ⅔ cup cheese. Repeat layers twice.
04 - Bake at 350°F for 30 to 35 minutes until hot and bubbly.

01 - Can use rotisserie chicken
