Kashmiri Pink Chai (Noon Tea) (Print Version)

# Ingredients:

→ Base

01 - 4 cups water
02 - 2 tablespoons Kashmiri/Himalayan green tea
03 - 1/2 teaspoon baking soda
04 - 2 cups whole milk

→ Spices

05 - 1-2 star anise
06 - 2 cardamom pods, crushed
07 - 1 cinnamon stick
08 - 1/4 teaspoon salt

→ For Serving

09 - Sugar or honey to taste
10 - Crushed nuts for garnish (optional)

# Instructions:

01 - Boil water with green tea for 5 minutes. Add baking soda and watch color turn red.
02 - Add star anise, cardamom, and cinnamon. Boil 1 minute more.
03 - Simmer 20-30 minutes until liquid reduces by half. Add salt.
04 - Add milk, bring to boil while stirring until tea turns pink.
05 - Strain, sweeten to taste, garnish with nuts if desired. Serve hot.

# Notes:

01 - Color changes from green to red to pink
02 - Must use whole milk for best results
03 - Requires constant stirring when adding milk
