Jalapeno Popper Grilled Cheese (Print Version)

01 - 2 jalapenos, sliced lengthwise, seeds and membranes removed
02 - 4 ounces cream cheese
03 - 4 slices crispy cooked bacon
04 - 2 slices Monterey Jack cheese
05 - 2 slices sharp cheddar cheese
06 - 4 slices Italian bread
07 - Cilantro, chopped (optional)
08 - Pats of butter

# Instructions:

01 - Preheat the oven to 375°F (190°C).
02 - Stuff each jalapeno half with approximately 1 ounce of cream cheese. Place them on a baking sheet.
03 - Bake the stuffed jalapenos for 25-30 minutes until semi-soft, the cheese is bubbly, and they begin to brown. Remove from oven.
04 - Place one slice of cheddar cheese on two bread slices and one slice of Monterey Jack on the other two slices. Slice the cooked jalapeno halves into bite-size pieces, dividing them between the two slices of bread with cheddar cheese. Add the four slices of bacon to the bread slices with Monterey Jack. If desired, sprinkle chopped cilantro on one side. Combine the slices to form two sandwiches.
05 - Top each sandwich with several pats of butter. Place in a skillet over medium-low heat with the buttered side down. Add more butter to the top side. Grill each side until lightly browned and the cheese is melted and gooey.

# Notes:

01 - Use food gloves to cut the jalapenos and remove seeds. Wash hands thoroughly afterward to avoid irritation.
02 - A small mound of cream cheese in each jalapeno works best. Excess may cook out.
03 - Reduce baking time by 10 minutes for firmer jalapeno texture.
04 - Select high-quality smoked nitrate-free bacon.
05 - For best results, use thick bakery-style white bread, Italian bread, or Artisan-style bread.
06 - Choose high-quality, thick slices of cheese for optimal flavor.
