Heat a skillet or griddle over medium heat.

Butter one side of each slice of sourdough bread.

Place 4 slices of bread, butter side down, on the skillet. Layer each with 2 slices of white cheddar cheese, peach slices, a drizzle of honey, and fresh basil leaves. Season with salt and pepper to taste.

Top with the remaining slices of bread, butter side up. Cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
