Pupusas (Print Version)

# Ingredients:

01 - 2 cups masa harina.
02 - 1 teaspoon chicken bouillon (optional).
03 - 1/2 teaspoon salt.
04 - 1 1/2 to 2 cups hot water.
05 - 2 tablespoons butter or lard.
06 - Oil for cooking.
07 - 1 cup shredded mozzarella or Oaxaca cheese.
08 - 1 cup refried beans (optional).

# Instructions:

01 - Mix masa harina, bouillon, and salt. Add hot water bit by bit until it feels like play dough. Mix in soft butter until well blended.
02 - Wet your hands with oil and water. Split dough into 12 golf ball sized pieces. Keep them covered with damp cloth.
03 - Flatten each ball, make a dent, add cheese and beans. Fold edges over filling to make a ball again, then flatten to 3 inches.
04 - If dough cracks, wet your hands and smooth the edges. Don't worry if they're not perfect.
05 - Heat pan with oil over medium heat. Cook pupusas about 3 minutes each side until golden. Don't flip too early.
06 - Eat them hot off the griddle while the cheese is all melty.

01 - Keep hands wet while working.
02 - Wait for crust before flipping.
03 - Make and eat fresh.
