Easy Vegan Banana Bread (Print Version)

# Ingredients:

→ Base

01 - 1¾ cups (210g) spelt flour
02 - ⅓ cup (75g) organic pure cane sugar
03 - 1 teaspoon baking powder
04 - 1 teaspoon baking soda
05 - 1 pinch salt
06 - ⅓ cup (75ml) neutral flavored oil
07 - 1 teaspoon vanilla extract
08 - 4 small or 3 large overripe bananas (1½-1¾ cups)
09 - ¼ cup (56ml) almond milk, if needed

→ Optional Add-ins

10 - ½-⅔ cup chopped walnuts
11 - ¼-½ cup chocolate chips
12 - 1 teaspoon cinnamon

# Instructions:

01 - Preheat oven to 350°F. Grease a loaf pan.
02 - Mash bananas in medium bowl. Add oil and vanilla. Mix in flour, sugar, baking soda, baking powder, and salt until just combined. Add milk if batter is too thick.
03 - Pour batter into prepared pan. Bake 50-60 minutes until toothpick comes out clean.
04 - Let cool 10 minutes before slicing.

01 - Can use applesauce instead of oil
02 - Stores up to 3 days on counter or 1 week in refrigerator
03 - Can be frozen for up to 2 months
