Hamburger Fried Rice (Print Version)

# Ingredients:

→ For the Rice

01 - 3/4 cup warm beef stock or water
02 - 2 tablespoons soy sauce
03 - 1 1/2 teaspoons mushroom flavored dark soy sauce
04 - 1 tablespoon oyster sauce
05 - 1/4 teaspoon sesame oil
06 - 1/4 teaspoon black pepper
07 - 4 cups cooked white jasmine rice
08 - 2 tablespoons vegetable oil, plus more for frying eggs
09 - 8 ounces ground beef (80% lean)
10 - 1 medium onion, diced
11 - 1 clove garlic, minced
12 - 1 tablespoon Shaoxing wine
13 - 1 cup frozen peas
14 - 1 scallion, chopped
15 - 4 eggs

→ Sweet Soy Sauce Mixture

16 - 1 tablespoon soy sauce
17 - 3 tablespoons hot water
18 - 1 teaspoon sugar

# Instructions:

01 - Combine the warm beef stock or water, soy sauces, oyster sauce, sesame oil, and black pepper in a small bowl.
02 - Fluff the cooked rice with a fork or your hands, breaking up any clumps. Tip: Rinse your hands in cold water if the rice sticks to them.
03 - Heat your wok until just smoking and add 2 tablespoons vegetable oil. Add ground beef and stir-fry until browned. Add onions, garlic, and Shaoxing wine, cooking until onions become translucent.
04 - Add the sauce mixture and bring to a simmer. Stir in rice until well combined and uniform in color. Add peas and stir-fry for 2-4 minutes until heated through.
05 - Stir in scallions and transfer to serving plates. Fry eggs to your preference and prepare the sweet soy sauce mixture. Serve with fried egg on top and drizzle with sweet soy sauce.

01 - A seasoned carbon steel wok or non-stick pan works best for this recipe
02 - Don't break up the ground beef too finely - small chunks add great texture
03 - The key to perfect fried eggs is using high heat before adding oil and eggs
