Combine soy sauce, brown sugar, sesame oil, grated garlic, grated ginger, cornstarch, water, and chili garlic sauce in a bowl. Mix thoroughly and set aside.

Dice the onion and slice the zucchini into rounds, then quarter the rounds.

Heat a large skillet over medium heat and add cooking oil. Once hot, sauté diced onion and zucchini for 4-5 minutes until onion becomes translucent and zucchini is lightly browned. Remove and set aside.

In the same skillet, add ground turkey and crumble while cooking until browned.

Return sautéed vegetables to the skillet with the browned turkey. Stir the prepared sauce and pour it over the mixture. Stir everything together and let it simmer for 2 minutes until the sauce thickens.

Remove from heat and serve hot. Optional garnishes include sliced green onions, red pepper flakes, sesame seeds, and cooked rice.
