Ground Chicken Smash Burgers (Print Version)

# Ingredients:

01 - 1 pound ground chicken
02 - Salt
03 - Pepper
04 - 4 slices yellow American cheese
05 - 4 brioche burger buns
06 - 1/4 cup mayo or light mayo (optional)

07 - Shredded iceberg lettuce
08 - Tomato slices
09 - Pickles
10 - Burger sauce

# Instructions:

01 - Prepare lettuce, tomato slices, pickles, and burger sauce ahead of time for quick assembly.
02 - Pat ground chicken dry with a paper towel and divide it into 2-ounce balls without squeezing or forming into meatballs. Season portions with a pinch of salt and pepper.
03 - Spread mayo lightly on each side of the buns. Heat a griddle or skillet over medium-high heat, coat lightly with oil or cooking spray, and toast the buns. Set aside.
04 - Place chicken balls on the hot pan. Cover each ball with a parchment square and press with a spatula to flatten into thin patties. Remove parchment carefully and season patties lightly with more salt and pepper.
05 - Cook patties for 2-3 minutes until golden brown and almost no pink remains. Flip and add cheese to alternating patties. Cook second side for another 60-90 seconds and stack non-cheese patties on top of cheese-topped patties.
06 - Place double chicken patties on the toasted buns. Add prepared toppings and serve immediately.

01 - Parchment paper prevents sticking during flattening and results in evenly-shaped patties.
