Golden Beet Burrata Stacks (Print Version)

# Ingredients:

01 - 3 golden beets, roasted and sliced into ½-inch thick rounds
02 - 2 red beets, roasted and sliced into ½-inch thick rounds
03 - 1 fresh burrata cheese ball, torn into creamy pieces
04 - ¼ cup pistachios, toasted and coarsely chopped
05 - Zest of 1 orange
06 - 1 tablespoon extra virgin olive oil
07 - 1 tablespoon honey
08 - ½ teaspoon flaky sea salt
09 - ½ teaspoon freshly ground black pepper
10 - Fresh thyme leaves, for garnish

# Instructions:

01 - Preheat the oven to 200°C (400°F). Wrap each beet in foil and place them on a baking sheet. Roast for 45–50 minutes, or until fork-tender. Let them cool, then peel and slice into ½-inch thick rounds.
02 - Start with a golden beet slice as the base. Add a spoonful of burrata, then place a red beet slice on top. Repeat the layers, finishing with a final dollop of burrata.
03 - Sprinkle with toasted pistachios for crunch. Drizzle with olive oil and honey. Finish with orange zest, flaky sea salt, and black pepper.
04 - Garnish with fresh thyme and serve immediately.
