Slow Cooker Garlic Butter Beef (Print Version)

# Ingredients:

01 - 1.5 lbs beef chuck roast or stew meat, cut into 1-inch pieces
02 - 1 lb baby potatoes, halved (or quartered if large)
03 - 4 tbsp unsalted butter, melted
04 - 4 garlic cloves, minced
05 - 1 tbsp olive oil
06 - 1 tsp dried thyme
07 - 1 tsp dried rosemary
08 - 1 tsp smoked paprika
09 - ½ tsp onion powder
10 - Salt and pepper, to taste
11 - ¼ cup beef broth
12 - 2 tbsp fresh parsley, chopped (for garnish)

# Instructions:

01 - Heat olive oil in skillet over medium-high heat. Sear beef bites until browned on all sides, about 2-3 minutes per side. Transfer to slow cooker.
02 - Mix melted butter, minced garlic, thyme, rosemary, smoked paprika, onion powder, salt, and pepper in small bowl.
03 - Place halved potatoes in bottom of slow cooker. Drizzle with half the garlic butter sauce. Add beef on top and drizzle with remaining sauce. Pour beef broth over everything.
04 - Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender and potatoes are cooked through.
05 - Stir gently to coat everything in sauce. Sprinkle with fresh parsley before serving.

01 - Can add vegetables like carrots or green beans
02 - For thicker sauce, add cornstarch slurry
03 - Leftovers keep in refrigerator up to 3 days
