Heat olive oil in skillet over medium-high heat. Sear beef bites until browned on all sides, about 2-3 minutes per side. Transfer to slow cooker.

Mix melted butter, minced garlic, thyme, rosemary, smoked paprika, onion powder, salt, and pepper in small bowl.

Place halved potatoes in bottom of slow cooker. Drizzle with half the garlic butter sauce. Add beef on top and drizzle with remaining sauce. Pour beef broth over everything.

Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender and potatoes are cooked through.

Stir gently to coat everything in sauce. Sprinkle with fresh parsley before serving.
