Slice the tofu into bite-sized cubes. Heat a non-stick frying pan over medium heat and drizzle in 2 tablespoons of oil. Add the tofu and 2 tablespoons of light soy sauce. Fry for 10 minutes, flipping the cubes every 2-3 minutes until golden.

While the tofu cooks, place the vermicelli noodles in a bowl with boiling water. Cook according to the packet instructions, then drain and let them steam under a tea towel for 5 minutes to achieve the perfect texture.

Add the carrot, spring onions, shiitake mushrooms, and edamame beans to the pan with the tofu. Fry for 3 minutes until the vegetables are tender.

In a small bowl, combine the light soy sauce, peanut butter, rice wine vinegar, sesame oil, sugar, garlic, and water. Mix well until smooth, adding more water if the sauce is too thick.

Add the steamed vermicelli noodles to the pan with the tofu and vegetables. Pour the sauce over the top and reduce the heat to low. Stir until everything is well coated and heated through.

Serve the noodles in bowls, garnished with fresh coriander and a drizzle of chilli oil. Enjoy!
